🇪🇺 New Episode "Europe's Most Ambitious Startup": Factory farming is reaching its breaking point with inhuman treatment of animals, antibiotic resistances, hormones that end up in your food and diseases that can jump from farm animals to humans. I visited @HoxtonFarms who produce lab-grown pork fat in the middle of London. Why fat and not lab-grown meat? 1) Flavor: What gives meat its flavor is *fat*. 2) Scalability: Growing muscle in a lab is still super complicated & expensive. This is why most only do ground beef vs full-steaks. Fat is a logical alternative and a first step to scalability. And Hoxton Farms is currently at an infliction point. They are now starting to test their cultivated fab with large Asian food producers to proof the model in small and then scale it up. In the video you will not only hear how they do it but visit their lab! We had to be a bit careful what we are able to show as they get ready for scaling (pending patents, unclear regulation, etc) but that's frontier tech for you.
